Blackberry Cobbler
Comment – This recipe comes from my Dad's side of the family. Blackberry cobbler is what my husband asked for instead of birthday cake this year. I think cobber is best served hot with vanilla ice cream. Enjoy!
Ingredients
4 cups Blackberries (1 pint)
1 cup sugar
1/4 cup cornstarch
Biscuit toppers (see recipe below)
Mix Blackberries and sugar together in a pot over low heat. When juices start to come out bring the mixture to a boil and then remove from heat. Pour the juice into a separate bowl while still hot and whisk in the cornstarch. Pour the sauce back into the berry mixture and stir. Pour the berries into a backing dish and add toppers. Bake for 25 min at 450 degrees.
Biscuit topper Ingredients
1 cup all-purpose flour, sift
2 tbsp sugar
1-1/2 tsp backing powder
1/4 tsp salt
1/4 cup butter
1/4 cup milk
1 egg
Mix top 4 dry ingredients. Cut in 1/4 cup butter until mixture resembles course crumbs. Combine 1/4 cup milk & 1 slightly beaten egg into the dry ingredients and stir just until moistened.
