Peach Cobbler

Comment – This is recipes comes from my Dad's side of the family. He would either bake it in the oven or use Dutch oven to cook it while I was growing up. It is best served with vanilla ice cream.

Peach Filling
1-1/2 tbsp cornstarch
1/4 tsp ground mace
1/2 cup brown sugar
1/2 cup water
4 cups sliced peaches
1 tbsp lemon juice
1 tbsp butter

Combine the first 4 ingredients. Stir in a pan over medium heat until the mixture thickens. Then add the remaining ingredients. Bring the mixture to a boil & stir for about 5 min until the peaches are hot. Pour filling into a casserole dish and immediately spoon 6 mounds of the biscuit topper on top of it. Bake for 25 min at 450 degrees F.

Biscuit Topper
1 cup all-purpose flour, sift
2 tbsp sugar
1-1/2 tsp backing powder
1/4 tsp salt
1/4 cup butter
1/4 cup milk
1 egg

Mix top 4 dry ingredients. Cut in 1/4 cup butter until mixture resembles course crumbs. Combine 1/4 cup milk & 1 slightly beaten egg into the dry ingredients and stir just until moistened.Pea
